Lab Technician (Prevail Winery)


Performs routine physical and chemical analysis of grapes, juice, wine, water, or any other related material pertaining to the operation of the winery. Maintains and manages wine analysis records and spreadsheets. Oversees bottling QC checks and executes training when required. Adheres to Prevail’s operating procedures and safety practices.

This is a full-time, 40 hours a week position. During harvest (August – November), a flexible schedule is expected, including overtime and weekends. Scheduled hours/start times will vary. For the remainder of the year, the schedule is M-Th 4 x 10 hours, with an occasional Friday.

Roles and Responsibilities

– Daily set-up and calibration of laboratory equipment
– Preparation and standardization of laboratory reagents.
– Collect and prepare juice/wine samples for analysis.
– Perform juice/wine analysis in a timely fashion, using either automated or bench chemistry analytical methods, including:
o Brix & temperature
o Ammonia, free amino nitrogen
o pH, free & total sulfur
o Titratable & volatile acidity
o Acetic acid, malic acid, residual sugar
o Ethanol
o Dissolved oxygen, specific gravity, carbon dioxide, turbidity
– Set-up of various wine trials, including heat stabilities.
– Participate in sensory assessments of juice, must and wine.
– Routine preventative maintenance on laboratory equipment.
– Purchase lab operating supplies as needed.
– Bottling quality control, including:
– Bottling line quality control checks
– Morning start-up checks: alcohol, FSO2, DO, CO2, ATP swabbing
– Winery wastewater and storm water quality control.
– Manage recordkeeping, lot tracking, analysis entry, or any other database entry.
– Maintain the cleanliness and organization of the lab.
– Understand and comply with all company Health/Safety/Environmental procedures.
– Develop and maintain laboratory standard operating procedures and policies.
– Audit and inspect areas of operations to ensure Safety and Food Safety standards are met.

Required Knowledge, Skills & Other Abilities

•Computer literate (Word and Excel) with excellent reasoning abilities and outstanding organization skills.
•  Excellent communication skills in English (spoken and written).
•  Ability to multi-task and respond quickly to demanding situations.
•  Must be able to do basic math.

Education & Experience
A BS or BA degree in chemistry, biochemistry, biology, or enology preferred.
